Pineapple and Carrot Cake

Mix together: 3 cups flour

2 cups sugar

1 tsp. soda

2 tsp. baking powder

2 tsp. cinnamon

Then add: 1 1/2 cups oil

2 tsp. vanilla

2 cups grated carrots

3 eggs, beaten

1 small can crushed pineapple with juice

1/2 cup coconut

1 cup Millican Pecan Pieces

Beat until batter is smooth about 2 minutes. Bake in long cake pan or bunt pan for about 1 hour at 350 degrees. Frost with Cream Cheese Icing.
